Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 2 cups rolled oats or quick oats
  • 1 cup all-purpose flour
  • 1 cup chocolate chips
  • 1/2 cup raisins optional

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Cream together peanut butter, butter, brown sugar, and granulated sugar until smooth.
  • Beat in eggs and vanilla extract until well mixed.
  • In a separate bowl, mix flour, oats, baking soda, and baking powder. Gradually add to wet ingredients.
  • Stir in chocolate chips and raisins if using.
  • Scoop dough onto baking sheets, leaving about 2 inches between cookies.
  • Bake 10–12 minutes, until edges are lightly golden. Cool on pan 5 minutes, then transfer to wire rack.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Add M&Ms or chopped nuts for extra flavor. Cookies freeze well, baked or unbaked. Don’t overbake for best texture.
