1cupcreamy peanut butter
1/2cupunsalted buttersoftened
3/4cupbrown sugar
1/2cupgranulated sugar
2large eggs
1tspvanilla extract
1tspbaking soda
1/4tspbaking powder
2cupsrolled oats or quick oats
1cupall-purpose flour
1cupchocolate chips
1/2cupraisinsoptional
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Cream together peanut butter, butter, brown sugar, and granulated sugar until smooth.
Beat in eggs and vanilla extract until well mixed.
In a separate bowl, mix flour, oats, baking soda, and baking powder. Gradually add to wet ingredients.
Stir in chocolate chips and raisins if using.
Scoop dough onto baking sheets, leaving about 2 inches between cookies.
Bake 10–12 minutes, until edges are lightly golden. Cool on pan 5 minutes, then transfer to wire rack.
Notes
For thicker cookies, chill the dough for 30 minutes before baking. Add M&Ms or chopped nuts for extra flavor. Cookies freeze well, baked or unbaked. Don’t overbake for best texture.
