Ingredients

  • 2 cups peeled and chopped apples about 2 medium apples
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans optional

Instructions

  • Preheat the oven to 350°F (175°C) and grease the baking pan.
  • In a large bowl, whisk together sugar, oil, eggs, and vanilla.
  • In another bowl, mix flour, baking soda, cinnamon, and salt.
  • Add the dry ingredients to the wet mixture and stir until just combined.
  • Fold in the apples and nuts.
  • Pour the batter into the pan and spread it out.
  • Bake for 40–45 minutes or until a toothpick comes out clean.
  • Cool on a rack before slicing.

Notes

For best results, use tart apples like Granny Smith or Honeycrisp. If apples are very juicy, pat them dry before mixing. Dust with powdered sugar or glaze for serving. Store covered at room temp for 2 days, or refrigerate for longer storage.
